50 Foods by Edward Behr Pdf

With 50 Foods, noted authority Edward Behr has created the definitive guide to the foods every food lover must know. A culinary Baedeker, 50 Foods will delight and inform the connoisseur as well as the novice. Like Behr’s celebrated magazine, The Art of Eating, 50 Foods presents simple, practical information about buying, using, preparing, and enjoying. Behr focuses on aroma, appearance, flavor, and texture to determine what “the best” means for each food. He tells you how to select top quality—signs of freshness and ripeness, best season, top varieties, proper aging. If the way to prepare, serve, or eat something is little known, then he explains it (how to open an oyster, why the best way to cook green beans is boiling, how to clean a whole salted anchovy, when to eat and when to discard the rind of a cheese). Behr also names the most complementary foods and flavors for each of these fifty marvelous foods and the wines that go with them. The fifty selections provide a broad sensory range for the modern gourmet. Most of the foods are raw materials, but some have been fermented or otherwise transformed—into bread, ham, cheese. Six of the fifty are cheeses. As Behr explains, cheese is probably the best food, as wine is the best drink. Behr argues that food tastes more delicious when it is closer to nature. Skilled low technology is almost always superior to high technology. But with scientific insight, the old methods can be refined to achieve more consistent high quality. We can’t always have the best, but with the information in this book we can eat better every day. Knowing good food is part of a complete understanding of the world—part of a full enjoyment of nature, a full experience of the senses, a full life. For the connoisseur at any level, 50 Foods is a beautifully written guide to deliciousness, with color illustrations by Mikel Jaso throughout.

Healthy Foods by Myrna Chandler Goldstein,Mark A. Goldstein MD Pdf

This book presents research findings about 50 foods that are commonly touted as healthy and educates readers about the medical problems they purportedly alleviate or help prevent. It is always in the best interest of those who market foods to make grandiose claims regarding their nutritional value, regardless of whether actual scientific proof exists to support such a claim. Even diligent and educated consumers often have difficulty discerning facts from mere theory or pure marketing hype. As the incidence of childhood obesity in the United States continues to increase at an alarming rate and food costs skyrocket, this book arrives at a perfect time for health-conscious consumers, providing an authoritative reference for anyone looking to make wise eating decisions at home, work, school, or in restaurants. Healthy Foods: Fact versus Fiction is the result of a collaborative effort between a medical doctor and an award-winning journalist and author on nutrition. This book provides actual research findings to shed light on the true benefits of the most popular health foods—and in some cases, debunk misconceptions surrounding certain foods.

Fifty Foods that Changed the Course of History by Bill Price Pdf

Food plays a central role in ours lives: it is a necessity for all of us, a pleasure for many and an obsession for a few. Throughout our history, we have shaped the foods we eat, but, in Fifty Foods That Changed tHe Course oF History, we look at how it has shaped us by discussing fifty different foodstuffs which have, in one way or another, changed the world. We begin with our ancient ancestors, the hunters and gathers who first migrated into Europe 45,000 years ago, and continue right up to the present day, to the food riots which swept through many countries in the wake of the 2008 global financial crisis, and then on into the future by discussing the potential of golden rice, the first genetically modified food developed for the good of humanity rather than solely for profit. In between, we look at, among others, how the trade in olive oil in Ancient Greece had a dramatic impact on its landscape, still apparent today, and how the European taste for sugar in the seventeenth and eighteenth centuries drove the transatlantic slave tade. Over the course of our journey through the history of food, we also take in the Hanseatic League, a Medieval forerunner of the European Union, which first began to develop because of the salted herring, and the gin craze in Georgian London, an outbreak of public drunkeness compared by some historians to the drug addictions of today. Then we move on to discuss how an Austrian ban on the import of pork from Serbia in 1906 was involved in the outbreak of the First World War, before getting right back up to date by considering the cultural impact of the Big Mac around the world. By taking examples from across such a wide stretch of history and from numerous different cultures and societies, what emerges is a portrait of the enormous influence food has had on our history. It not only sustains us, but has played a central role in the way we live our lives, as it will no doubt continue to do in the future. If it is true to say that we are what we eat, then the examples described here, of fifty foods that changed the course of history, show us that it is equally the case that what we eat makes us who we are.

Biodiversity, Food and Nutrition by Danny Hunter,Teresa Borelli,Eliot Gee Pdf

This book examines the challenges and impacts of poor diets and nutrition from current food systems and the potential contribution of biodiversity and ecosystem services in addressing these problems. There is a strong need for a multi-level, cross-sectoral approach that connects food biodiversity conservation and sustainable use to address critical problems in our current food systems, including malnutrition. Building on research from the Biodiversity for Food and Nutrition Project (BFN), which aims to better link biodiversity, diets and nutrition, the book presents a multi-country, cross-sectoral analysis of initiatives that have promoted local food biodiversity in four countries: Brazil, Kenya, Turkey and Sri Lanka. This book offers a comprehensive summary of the BFN Project results in each of the four countries along with lessons learned and how this work could be upscaled or applied in other regions. It argues that the strategic promotion and use of food biodiversity is critical in uniting attempts to address conservation, nutrition and livelihood concerns. The book is structured around chapters and case studies encompassing the BFN Project with specific experiences related by partners who played key roles in the work being done in each country. By offering a comparative view capable of furthering dialogue between the respective countries, it is also meant to connect the individual cases for a “greater than the sum of its parts” effect. This means consideration of how localized activities can be adapted to more countries and regions. Therefore, the book addresses global issues with a foot planted firmly in the grounded case study locations. This book will be of great interest to policymakers, practitioners and NGOs working on food and nutrition, as well as students and scholars of agriculture, food systems and sustainable development.
