Excerpt from Kirkes Handbook of Physiology In this the ninth edition of the Handbook the chapter on Nutrition has been revised to call attention to the very fundamental work of Osborne and Mendel on food factors necessary for growth, and of Funk, Voegtlin and others on the vitamines and nutritional diseases. The giant strides of the science of Physiology during recent years make it difficult to keep pace with the literature, but it is hoped that the facts and principles that have received acceptance have been incorporated in so far as the limitations of the available space permit. Many of the discussions and illustrative laboratory experiments have been rewritten, and improvements simplifying the technique have been incorporated. It is felt that the student in Physiology gains the greatest strength in his laboratory experiments when the tests he executes are chosen from the standpoint of the pedagogical efficiency of the entire work.
