"Though use of plastic tubing for collecting maple sap has been hailed as the greatest advance ever made by the maple sugar industry, relatively few maple sugar producers are using tubing systems. Excerpt from The Use of Plastic Tubing for Collecting and Transporting Maple Sap: How It Is Installed, Taken Down, Washed and Reinstalled Since maple sap is not exuded from trees at all times under high pressure, the best method for installing the tub ing is one patterned after that used in gravity flow waste dis posal systems with the main or trunk lines being of sufficient diameter so that they are never overloaded. These systems are installed with a continuous, even though slight, pitch of both the feeder lines (laterals) and trunk (main) lines toward the exit end. Also, following the pattern of waste systems, vents must be installed at all high points to prevent gas locks. Excerpt from Collecting Maple Sap With Plastic Tubing Although laboratory tests show higher carrying capacity for laterals on steeper slopes, in practice more than 50 taps are rarely installed on a line. This is because of the difficulty of taking down, cleaning, and reinstalling large rolls of tubing. A 50-tap roll is about as large a roll as an operator would want to handle. This should not be a limiting factor for operations where the tubing is left hanging; in these, the operator should use the full carry ing capacity of the -inch tubing on steeper slopes. Leaks in lateral lines cause the loss of both natural and artificial vacuum and result in low sap yields. Most leaks are caused by failure to push the tubing over the collar of the fitting and can be corrected easily (fig. Per sistent leaks at junction points or at joints subject to heavy tension can be corrected by the use of clamps. Like many North American industries in the late nineteenth and early twentieth centuries, the business of making maple sugar and syrup went through a period of maturation and modernization. Much of this change and new business model was influenced and controlled by one man and the company he created in St. Johnsbury, Vermont. George C. Cary and the Cary Maple Sugar Company grew in size and influence such that it controlled as much as 80 percent of the bulk maple sugar market, bestowing on Cary the title of Maple King and St. Johnsbury as the Maple Capital of the World. This book recounts the rise of the Cary Company and takes a closer look at who Cary was and the maple sugar and maple syrup empire that he created. As encompassing as the Cary Empire was, it overreached its limits and came tumbling to the ground with the stunning bankruptcy and death of its leader in 1931. However, Cary's legacy did not die with him, and as told here, St. Johnsbury continued to have a significant place and role in the ever-evolving maple sugar and syrup industry.
