Advances in Postharvest Technologies of Vegetable Crops by Bijendra Singh,Sudhir Singh Pdf

This book presents a selection of innovative postharvest management practices for vegetables. It covers technologies in harvesting, handling, and storage of vegetables, including strategies for low-temperature storage of vegetables, active and smart packaging of vegetables, edible coatings, application of nanotechnology in postharvest technology of vegetable crops, and more. It considers most of the important areas of vegetable processing while maintaining nutritional quality and addressing safety issues. Fruits and vegetables are important sources of nutrients such as vitamins, minerals, and bioactive compounds, which provide many health benefits. However, due to poor postharvest management—such as non-availability of cold chain management and low-cost processing facilities, large quantities of vegetables perish before they reach the consumer. Furthermore, higher temperatures in some regions also contribute to an increased level of postharvest losses. With chapters written by experts in the postharvest handling of vegetable, this volume addresses these challenges. It is devoted to presenting both new and innovative technologies as well as advancements in traditional technologies.

Quality of Fresh and Processed Foods by Fereidoon Shahidi,Arthur M. Spanier,Chi-Tang Ho,Terry Braggins Pdf

Quality is a composite term encompassing many characteristics of foods. These include color, aroma, texture, general nutrition, shelf-life, stability, and possible presence of undesirable constituents. Obviously deterioration of quality may lead to changes in the attributes that characterize the food in its fresh or freshly processed state. In addition, quality enhancement of products may be carried out using appropriate processing techniques. Interaction of different components present with one another could have a profound effect on sensory quality of products. Meanwhile, presence of extraneous matter such as pesticides and debris may also contribute to a compromise in the quality of foods. In addition, processing often brings about changes in many attributes of food including its nutritional value. Thus, examination of process-induced changes in food products is important. In this book, a cursory account of quality attributes of fresh and processed foods is provided. The book is of interest to food scientists, nutritionists and biochemists in academia, government and industry.

The Role of Post-harvest Management in Assuring the Quality and Safety of Horticultural Produce by Adel A. Kader,Rosa Sonya Rolle,Food and Agriculture Organization of the United Nations Pdf

Basic approaches to maintaining the safety and quality of horticultural produce are the same, regardless of the market to which this produce is targeted. This bulletin reviews the factors which contribute to quality and safety deterioration of horticultural produce, and describes approaches to assuring the maintenance of quality and safety throughout the post-harvest chain. Specific examples are given to illustrate the economic implications of investing in and applying proper post-harvest technologies. Criteria for the assessment of post-harvest needs, the selection of post-harvest technologies appropriate to the situation and context, and for extending appropriate levels of post-harvest information are also discussed.

Production Practices and Quality Assessment of Food Crops by Ramdane Dris,S. Mohan Jain Pdf

Plants require nutrients in order to grow, develop and complete their life cycle. Mineral fertilizers, and hence the fertilizer industry, constitute one of the most imp- tant keys to the world food supplies. There is growing concern about the safety and quality of food. Carbon, hydrogen and oxygen, which, together with nitrogen, form the structural matter in plants, are freely available from air and water. Nitrogen, phosphorus and potassium, on the other hand, may not be present in quantities or forms sufficient to support plant growth. In this case, the absence of these nut- ents constitutes a limiting factor. The supply of nutrients to the plants should be balanced in order to maximise the efficiency of the individual nutrients so that these meet the needs of the particular crop and soil type. For example, it should be noted that EU-wide regulations are not designed to govern the specific details of mineral fertilizer use. Although plants receive a natural supply of nitrogen, phosphorus and potassium from organic matter and soil minerals, this is not usually sufficient to satisfy the demands of crop plants. The supply of nutrients must therefore be supplemented with fertilizers, both to meet the requirements of crops during periods of plant growth and to replenish soil reserves after the crop has been harvested. Pesticides are important in modern farming and will remain indispensable for the foreseeable future.
