Handbook of Fruits and Fruit Processing by Y. H. Hui,József Barta,M. Pilar Cano,Todd W. Gusek,Jiwan S. Sidhu,Nirmal K. Sinha Pdf

The processing of fruits continues to undergo rapid change. In the Handbook of Fruits and Fruit Processing, Dr. Y.H. Hui and his editorial team have assembled over forty respected academicians and industry professionals to create an indispensable resource on the scientific principles and technological methods for processing fruits of all types. The book describes the processing of fruits from four perspectives: a scientific basis, manufacturing and engineering principles, production techniques, and processing of individual fruits. A scientific knowledge of the horticulture, biology, chemistry, and nutrition of fruits forms the foundation. A presentation of technological and engineering principles involved in processing fruits is a prelude to their commercial production. As examples, the manufacture of several categories of fruit products is discussed. The final part of the book discusses individual fruits, covering their harvest to a finished product in a retail market. As a professional reference book replete with the latest research or as a practical textbook filled with example after example of commodity applications, the Handbook of Fruits and Fruit Processing is the current, comprehensive, yet compact resource ideal for the fruit industry.

Nitro Compounds and Their Derivatives in Organic Synthesis by Nagatoshi Nishiwaki Pdf

Nitro chemistry plays an important role in organic synthesis to construct new frameworks. This is due to the diverse properties of the nitro group. The strong electron-withdrawing ability of the nitro group reduces the electron density of the scaffold, facilitating reactions with nucleophiles or electron transfer. In addition, the -hydrogen of the nitro group is highly acidic, giving a stable anion, which facilitates reactions with both electrophilic and nucleophilic reagents. In addition, the nitro group also serves as a good leaving group, which facilitates transformation to a wide variety of functional groups. Despite the substantial contributions of many researchers, nitro chemistry is still an exciting and challenging research area. This book brings together recent original research and review articles contributed by an international team of leading experts and pioneers in organic synthesis using nitro groups. It is sure to provide useful information and promising insights for researchers.

Recent Advances in Organocatalysis by Iyad Karamé,Hassan Srour Pdf

Organocatalysis has recently attracted enormous attention as green and sustainable catalysis. It was realized as a fundamental field providing wide families of catalysts for important organic transformations. It will certainly develop in the future. Given the diversity of accessible transformations, metal-catalyzed reactions have become major tools in organic synthesis that will undoubtedly continue to have an important impact in the future. Alternatively, over the last years, a metal-free approach such as organocatalysis has reached a level of faithfulness, allowing researchers to discover new catalytic systems based on engagement of new or early-prepared organic molecules as organocatalysts. Organocatalysis meets green chemistry principles, especially the reduction of toxicity and chemical accidents, the biodegradability, and the use of benign and friendlier reaction media and conditions.

Organophosphorus Chemistry 2018 by György Keglevich Pdf

Organophosphorus chemistry is an important discipline within organic chemistry. Phosphorus compounds, such as phosphines, trialkyl phosphites, phosphine oxides (chalcogenides), phosphonates, phosphinates and >P(O)H species, etc., may be important starting materials or intermediates in syntheses. Let us mention the Wittig reaction and the related transformations, the Arbuzov- and the Pudovik reactions, the Kabachnik–Fields condensation, the Hirao reaction, the Mitsunobu reaction, etc. Other reactions, e.g., homogeneous catalytic transformations or C-C coupling reactions involve P-ligands in transition metal (Pt, Pd, etc.) complex catalysts. The synthesis of chiral organophosphorus compounds means a continuous challenge. Methods have been elaborated for the resolution of tertiary phosphine oxides and for stereoselective organophosphorus transformations. P-heterocyclic compounds, including aromatic and bridged derivatives, P-functionalized macrocycles, dendrimers and low coordinated P-fragments, are also of interest. An important segment of organophosphorus chemistry is the pool of biologically-active compounds that are searched and used as drugs, or as plant-protecting agents. The natural analogue of P-compounds may also be mentioned. Many new phosphine oxides, phosphinates, phosphonates and phosphoric esters have been described, which may find application on a broad scale. Phase transfer catalysis, ionic liquids and detergents also have connections to phosphorus chemistry. Green chemical aspects of organophosphorus chemistry (e.g., microwave-assisted syntheses, solvent-free accomplishments, optimizations, and atom-efficient syntheses) represent a dynamically developing field. Last, but not least, theoretical approaches and computational chemistry are also a strong sub-discipline within organophosphorus chemistry.

Photoinduced Phase Transitions by K. Nasu Pdf

A new class of insulating solids was recently discovered. Whenirradiated by a few visible photons, these solids give rise to amacroscopic excited domain that has new structural and electronicorders quite different from the starting ground state. This occurrenceis called photoinduced phase transition, and this multi-authoredbook reviews recent theoretical and experimental studies of this newphenomenon.
