Facts about Champagne by Henry Vizetelly Pdf

Facts About Champagne and other sparkling wines, by Henry Vizetelly. Strong men, we know, lived before Agamemnon; and strong wine was made in the fair province of Champagne long before the days of the sagacious Dom Perignon, to whom we are indebted for the sparkling vintage known under the now familiar name. The chalky slopes that border the Marne were early recognised as offering special advantages for the culture of the vine. The priests and monks, whose vows of sobriety certainly did not lessen their appreciation of the good things of this life, 10 and the produce of whose vineyards usually enjoyed a higher reputation than that of their lay neighbours, were clever enough to seize upon the most eligible sites, and quick to spread abroad the fame of their wines. St. Remi, baptiser of Clovis, the first Christian king in France, at the end of the fifth century left by will, to various churches, the vineyards which he owned at Reims and Laon, together with the "vilains" employed in their cultivation. Some three and a half centuries later we find worthy Bishop Pardulus of Laon imitating Paul's advice to Timothy, and urging Archbishop Hincmar to drink of the wines of Epernay and Reims for his stomach's sake.

This volume is a reprint of a book first published in 1882 provides abundant information about the historical development of Champagne and other sparkling wines. Following is a quotation from the Preface--"The present is the first instance in which the history of any wine has been traced with the same degree of minuteness as the history of the still and sparkling wines of the Champagne has been traced in the following pages. And not only have the author's investigations extended over a very wide range, as will be seen by the references contained in the footnotes to this volume, but during the past ten years he has paid frequent visits to the Champagne-to its vineyards and vendangeoirs, and to the establishments of the chief manufacturers of sparkling wine, the preparation of which he has witnessed in all its phases. Visits have, moreover, been made to various other localities where sparkling wines are produced, and more or less interesting information gathered regarding the latter."This edition does not include the illustrations that appeared in the original publication.
