More than 40 methods for measuring surface tension both at the liquid-fluid and solid-fluid boundaries are described including methods using computational techniques, tele- and video-apparatus, and laser techniques. A central place in the book has been given to methods based on the investigation of properties of liquid and gaseous menisci both in the presence or absence of a gravitational field and a rotational one. Human biological liquids contain numerous low- and high-molecular weight surfactants. The human organism contains interfaces with enormous surfaces. The physicochemical and biochemical processes taking place at these interfaces are extremely important for the vital functions of the organism as a whole, and the interfacial properties may reflect peculiarities of age and sex, health and disease. The present book is the first attempt to systematically present the results of dynamic and equilibrium surface tensions measurements of serum and urine samples that were obtained from healthy humans of various sex and age, and to compare these results with measurements of biological liquids obtained from patients suffering from various diseases or with measurements of amniotic fluid obtained from women at various stages of pregnancy. Pulmonary medicine, especially neonatology, has systematically used interfacial tensiometry for studying pulmonary surfactant. In this particular area, significant progress was achieved in the treatment of diseases related to alterations of the lung surfactant system. We believe that, similar to the progress in pulmonary medicine attributed to surface chemical studies of lung surfactant, progress in other medical branches could be expected through studies of interfacial characteristics of other human biological liquids. For several years the authors of this book have been engaged in studies aimed at the improvement of the maximum bubble pressure method, resulting in the development of computer controlled tensiometers which are capable of measuring dynamic surface tensions within a wide range of surface lifetime. In addition to the measurement techniques, a correct interpretation and analysis of the tensiometric data obtained is extremely important. The kinetic theory of adsorption from solutions, and the theory of equilibrium adsorption layers of surfactant/protein mixtures provide the basis for both the choice of the most characteristic parameters of tensiograms and the analysis of the results. Some theoretical models describing the adsorption of proteins are presented in Chapter 1. The main theoretical and experimental issues related to the maximum bubble pressure technique as applied to biological liquids are presented in Chapter 2. A more detailed discussion of the differences of the various methods in use for measuring dynamic surface tension of biological fluids is provided in Chapter 3. Chapter 4 gives data from patients with kidney disease, Chapter 5 from patients with rheumatic diseases, Chapter 6 with pulmonary diseases, Chapter 7 with diseases of the central nervous system, and Chapter 8 with neoplasms. Dynamic interface tensiometry of human biological liquids is a fascinating new method which deserves a broad use for prospective studies of various diseases.

The shape of drops and bubbles is the centre of interest for many interfacial scientists. This book describes the most recent accomplishments to make use of drops and bubbles in fundamental research and application. After a general introduction into the mechanics of liquid menisci, chapters are dedicated to methods based on drops or bubbles. The chapters about the three main drop experiments provide the theoretical basis, a description of experimental set-ups, specific advantages and disadvantages, correction and calibration problems, experimental examples and their interpretation: pendent and sessile drop, drop volume, and spinning drop technique. The chapter about capillary pressure methods summarises different techniques and gives examples of applications, for instance measurements under microgravity. The maximum bubble pressure technique as a particular capillary pressure method is described, with emphasis on the most recent developments which made this technique applicable to extremely short adsorption times, down to the range of milliseconds and less. Problems connected with aerodynamics and hydrodynamics are discussed and used to show the limits of this widely used standard method. The oscillating bubble technique provides information not available by other techniques, for example about the dilational rheology of adsorption layers and relaxation processes at the interface. The description of rising bubbles in surfactant solutions will contain the hydrodynamic basis as well as the theoretical description of the effect of interfacial layers on the movement of bubbles. Besides the theoretical basis experimental data, such as water purification, flotation processes etc. and the relevance for practical applications will be presented. The chapter about lung alveols demonstrates how important bubbles built by biological membranes are in everyday life. The relevance for medicine and biology as well as model studies is discussed. An important example for the application of drops is metallurgy, where the surface tension of metals and alloys is an important parameter for many applications. The chapters on drop shape analysis by using fibre technique and on force measurements between emulsion droplets are of much practical relevance. Lists of references and symbols are given separately at the end of each chapter while a common subject index is given at the end of the book.

The history of the liquid-liquid interface on the earth might be as old as that of the liquid. It is plausible that the generation of the primitive cell membrane is responsible for an accidental advent of the oldest liquid interfaces, since various compounds can be concentrated by an adsorption at the interface. The presence of liquid-liquid interface means that real liquids are far from ideal liquids that must be miscible with any kinds of liquids and have no interface. Thus it can be said that the non-ideality of liquids might generate the liquid-liquid interface indeed and that biological systems might be generated from the non-ideal interface. The liquid-liquid interface has been, therefore, studied as a model of biological membrane. From pairing two-phases of gas, liquid and solid, nine different pairs can be obtained, which include three homo-pairs of gas-gas, liquid-liquid and solid-solid pairs. The gas-gas interface, however, is practically no use under the ordinary conditions. Among the interfaces produced by the pairing, the liquid-liquid interface is most slippery and difficult to be studied experimentally in comparison with the gas-liquid and solid-liquid interfaces, as the liquid-liquid interface is flexible, thin and buried between bulk liquid phases. Therefore, in order to study the liquid-liquid interface, the invention of innovative measurement methods has a primary importance.
