Food, Fermentation, and Micro-organisms by Charles W. Bamforth,David J. Cook Pdf
Fermentation and the use of micro-organisms is one of the most important aspects of food processing – an industry that is worth billions of US dollars world-wide. Integral to the making of goods ranging from beer and wine to yogurt and bread, it is the common denominator between many of our favorite things to eat and drink. In this updated and expanded second edition of Food, Fermentation, and Micro-organisms, all known food applications of fermentation are examined. Beginning with the science underpinning food fermentations, the author looks at the relevant aspects of microbiology and microbial physiology before covering individual foodstuffs and the role of fermentation in their production, as well as the possibilities that exist for fermentation’s future development and application. Many chapters, particularly those on cheese, meat, fish, bread, and yoghurt, now feature expanded content and additional illustrations. Furthermore, a newly included chapter looks at indigenous alcoholic beverages. Food, Fermentation, and Micro-organisms, Second Edition is a comprehensive guide for all food scientists, technologists, and microbiologists working in the food industry and academia today. The book will be an important addition to libraries in food companies, research establishments, and universities where food studies, food science, food technology and microbiology are studied and taught.

Biology of Microorganisms on Grapes, in Must and in Wine by Helmut König,Gottfried Unden,Jürgen Fröhlich Pdf
The second edition of the book begins with the description of the diversity of wine-related microorganisms, followed by an outline of their primary and energy metabolism. Subsequently, important aspects of the secondary metabolism are dealt with, since these activities have an impact on wine quality and off-flavour formation. Then chapters about stimulating and inhibitory growth factors follow. This knowledge is helpful for the growth management of different microbial species. The next chapters focus on the application of the consolidated findings of molecular biology and regulation the functioning of regulatory cellular networks, leading to a better understanding of the phenotypic behaviour of the microbes in general and especially of the starter cultures as well as of stimulatory and inhibitory cell-cell interactions during wine making. In the last part of the book, a compilation of modern methods complete the understanding of microbial processes during the conversion of must to wine. This broad range of topics about the biology of the microbes involved in the vinification process could be provided in one book only because of the input of many experts from different wine-growing countries.

Microorganisms in Foods 5 by International Commission on Microbiological Specifications for Foods Pdf
The aim of this book is to assemble detailed information relating to foodborne pathogens in order to make it readily accessible to those who wish to employ the HACCP system for the control of microbial hazards. The book is concerned solely with foodborne pathogens and does not discuss spoilage organisms. Each chapter provides a general survey of a foodborne pathogen, with appropriate referencing to authoritative review material. Reviews the history and the occurrence of the organism in nature as well as its taxonomy. Discusses the symptoms (but not the treatment) of the relevant foodborne disease syndrome(s), as well as the mechanism of pathogenicity. Consideration is given to the available method for the enumeration and identification of the organism, as well as possible alternative methods. Also reviews the epidemiology of the foodborne disease and its importance. Each chapter concerns itself with the specific parameters that influence the growth, survival or death of the microorganism. Includes information on temperature, water activity, pH, irradiation, preservatives, gases, disinfectants and, where possible, on interactions between these parameters. Written for food technologists, product developers, food microbiologists and regulators.

Size Limits of Very Small Microorganisms by National Research Council,Division on Engineering and Physical Sciences,Space Studies Board,Commission on Physical Sciences, Mathematics, and Applications,Steering Group for the Workshop on Size Limits of Very Small Microorganisms Pdf
How small can a free-living organism be? On the surface, this question is straightforward-in principle, the smallest cells can be identified and measured. But understanding what factors determine this lower limit, and addressing the host of other questions that follow on from this knowledge, require a fundamental understanding of the chemistry and ecology of cellular life. The recent report of evidence for life in a martian meteorite and the prospect of searching for biological signatures in intelligently chosen samples from Mars and elsewhere bring a new immediacy to such questions. How do we recognize the morphological or chemical remnants of life in rocks deposited 4 billion years ago on another planet? Are the empirical limits on cell size identified by observation on Earth applicable to life wherever it may occur, or is minimum size a function of the particular chemistry of an individual planetary surface? These questions formed the focus of a workshop on the size limits of very small organisms, organized by the Steering .Group for the Workshop on Size Limits of Very Small Microorganisms and held on October 22 and 23, 1998. Eighteen invited panelists, representing fields ranging from cell biology and molecular genetics to paleontology and mineralogy, joined with an almost equal number of other participants in a wide-ranging exploration of minimum cell size and the challenge of interpreting micro- and nano-scale features of sedimentary rocks found on Earth or elsewhere in the solar system. This document contains the proceedings of that workshop. It includes position papers presented by the individual panelists, arranged by panel, along with a summary, for each of the four sessions, of extensive roundtable discussions that involved the panelists as well as other workshop participants.

Enigmatic Microorganisms and Life in Extreme Environments by Joseph Seckbach Pdf
Modern methods and approaches, such as the analysis of molecular sequences to infer evolutionary relationships among organisms, have provided vast new sets of data to further our understanding ofliving organisms, but there remain enigmas in the biological world that will keep scientists working and thinking for decades. Microorganisms by virtue of their small size and almost unbounded diversity provide ample examples of intriguing mysteries that are being challenged with all of the techniques the modern scientific arsenal can provide. One whole arena of this battle to resolve puzzling mysteries about various microorganisms is the almost unbelievable ability of many micro-organisms to live in extreme environments. Whether the challenge is extreme heat, cold, pressure, hyper salinity, alkalinity or acidity, some micro-organisms live now where no life might seem possible. This fascinating state of affairs is the context for this present volume edited by Joseph Seckbach. This Volume is a compilation of many of the especially interesting questions and biological challenges that arise in the consideration of microorganisms in general and the extremophiles in particular.

Elimination of Micro-organisms by Water Treatment Processes by Wim A. M. Hijnen,Gertjan J. Medema Pdf
Special Offer: KWR Drinking Water Treatment Set - Buy all five books together and save a total £119! The overall aim of Elimination of Micro-organisms by Water Treatment Processes is to present default values for the micro-organisms elimination or inactivation credit of universally used processes in water treatment (MEC or MIC). The growing interest in Quantitative Microbial Risk assessment (QMRA) for safe drinking water requires such data. These MEC or MIC values have been calculated from research on elimination of viruses, bacteria and bacterial spores and protozoa (oo)cysts (Cryptosporidium and Giardia) by these treatment processes published in the international literature. The data have been selected on the base of different quality criteria related to information on applied experimental conditions and used methods. Furthermore the studies have been categorized on base of their similarities with ‘real world’ conditions (selected micro-organisms, scale and conditions of the tested processes). The international literature data revealed a high variation in elimination. The major parameters and process control parameters affecting elimination are described. This new edition describes the state-of-the-art progress in research on conventional treatment, coagulation and flocculation, rapid granular filtration, slow sand filtration and UV disinfection. Field Testing Genetically Modified Organisms by National Research Council,Division on Earth and Life Studies,Commission on Life Sciences,Committee on Scientific Evaluation of the Introduction of Genetically Modified Microorganisms and Plants into the Environment Pdf
Potential benefits from the use of genetically modified organismsâ€"such as bacteria that biodegrade environmental pollutantsâ€"are enormous. To minimize the risks of releasing such organisms into the environment, regulators are working to develop rational safeguards. This volume provides a comprehensive examination of the issues surrounding testing these organisms in the laboratory or the field and a practical framework for making decisions about organism release. Beginning with a discussion of classical versus molecular techniques for genetic alteration, the volume is divided into major sections for plants and microorganisms and covers the characteristics of altered organisms, past experience with releases, and such specific issues as whether plant introductions could promote weediness. The executive summary presents major conclusions and outlines the recommended decision-making framework.
