Salt was a commodity of great importance in the ancient past, just as it is today. Its roles in promoting human health and in making food more palatable are well-known; in peasant societies it also plays a very important role in the preservation of foodstuffs and in a range of industries. Uncovering the evidence for the ancient production and use of salt has been a concern for historians over many years, but interest in the archaeology of salt has been a particular focus of research in recent times. This book charts the history of research on archaeological salt and traces the story of its production in Europe from earliest times down to the Iron Age. It presents the results of recent research, which has shown how much new evidence is now available from the different countries of Europe. Economic archaeology is the study of how past peoples exploited animals and plants, using as evidence the remains of those animals and plants. The animal side is usually termed zooarchaeology, the plant side archaeobotany. What distinguishes them from other studies of ancient animals and plants is that their ultimate aim is to find out about human behaviour – the animal and plant remains are a means to this end. In Maya Salt Works, Heather McKillop details her archaeological team’s groundbreaking discovery of a unique and massive salt production complex submerged in a lagoon in southern Belize. Exploring the organization of production and trade at the Paynes Creek Salt Works, McKillop offers a fascinating new look at the role of salt in the ancient Maya economy. McKillop maps over 4,000 wooden posts and wedges, the first known wooden structures preserved underwater from the Classic period, describing new methods of underwater archaeology developed specifically for this shallow maritime setting. She explains the technology of salt production, examining fragments of briquetage—the pots that boiled brine over fires in the kitchens—and provides evidence that salt workers relied on specific types of wood for building construction.
