Excerpt from The Standard Domestic Science Cook Book The work would not be complete without some reference to the danger that is rapidly becoming a national curse, and which, if not checked, will prove the crime of the century. Of course, the Pure Food Law is timely, but it cannot be effective unless the people themselves insist that all prepared foodstuffs shall bear the government stamp, which specifies the composition and degree of purity. Public School Domestic Science (Classic Reprint) by Mrs. J. Hoodless Pdf

Excerpt from Public School Domestic Science N eminent authority says: Up to the age of sixteen even a lucid statement of principles is received by all but a few pupils as dogma. They do not and cannot in any adequate sense realize the reasoning process by which scientific conclusions are reached. They are taught not only facts but classifications and laws, and causes in relation to their effect. These are not, in the majority of cases, elaborated by the pupil. The teaching of them accordingly degenerates into a statement of facts, and the learning of them into an act of memory. The People's Home Recipe Book by Mrs. Alice Gitchell Kirk Pdf

Excerpt from The People's Home Recipe Book: Book II of the People's Home Library Though the world is full of cook books of every description, yet it has been my experience that there are few of them that are more than a collection of recipes. There are few really good teachers of the science of cooking. For the past thirty years the author has been engaged in teaching of some kind, ranging from kindergarten work to assistant at Chicago University and from private teacher of cooking to Public Lecturer on Domestic Science. This training has not only given mea knowledge of the subjects in hand but has perhaps rendered me capable of imparting this knowledge to others in a way to be easily. Understood by all. Having managed a home of my own for twelve years and having lived in both the country and the city have probably given me a knowledge of the practical needs of the average home. Further than this, I am called upon reg ularly each week by 'phone to direct the culinary affairs of many Cleveland homes, thus giving me the practical experience which is lacking in so many teachers of Domestic Science. Furthermore, during the past five years I have delivered (and am still engaged in the lecture work) a series of over six hun dred public lectures on cooking, a larger number than ever before delivered on this subject by any woman in one place. These things have brought me in direct contact with thousands of people of all classes, given me a knowledge of their needs and at the same time fitted me for imparting this knowledge to others in a practical way. Having been principal of private 'schools and being at the present time a member of The Domestic Science and Art Association of Cleveland, and The American Home Economics Association of Chicago, and also! State Secretary of The Associated Clubs of Domestic Science has brought me in contact with many of our ablest instructors in Domestic Science and afforded me an excellent opportunity to get the best and most modern ideas relative to the science of cooking. These ideas I have endeavored to incorporate in this work, leaving out the technical things and making them practical for the home. Teachers' Manual for Instruction in Domestic Science (Classic Reprint) by Julia H. Oakley Pdf

Excerpt from Teachers' Manual for Instruction in Domestic Science The white Of egg is called albumen. This, and other sub stances like it, such as casein (curd) of milk and the albumen and myosin of muscle (lean meat) are called albuminoids (albu' men-like substances). They are the most important of the nutritive ingredients of our food because they make muscle, blood, etc. One of the properties of albumen is coagulation. This can be produced in the white of an egg by the application of heat. We all know that when an egg has been immersed during a few minutes in boiling water, the colorless Shiny liquid is converted into the solid white to which it owes its name. This coagulation of albumen is one of the most decided and best understood changes effected by cooking. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. It is not merely a cook book. So many good cook books are on the market that there would be no justification for adding another to the list. The cook book, however, merely presents hundreds of recipes showing innumerable ways in which foods may be prepared, without attempting to present the principles underlying all cooking. The principles of cooking are few in number and are easily mastered, if properly presented. Foods may be grouped in less than a dozen classes, and when the principles which apply to each class are learned and practiced, each pupil will know how to prepare a variety of dishes from each food or class of foods. After the principles of cooking are fully understood and applied in practical lessons, there is no educational or practical value in the preparation of isolated recipes or in a sequence of lessons on one class of foods. The object of domestic science work in schools is that a girl may learn how to plan, cook, and serve meals at home, calculate the cost, and purchase foods in the best market at the lowest price. This includes knowing the nutritive value of each food and its place in the diet. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books.
