European Local Pig Breeds - Diversity and Performance by Marjeta Čandek-Potokar,Rosa Nieto Pdf

Local or autochthonous pig breeds represent a pool of genetic diversity of porcine species and a link with old-style traditional production systems and traditional pork products. These breeds were largely abandoned because they were not competitive in the concept of modern, industrial type of pig production. Despite an increased interest for local pig breeds in the past years, they remain largely untapped and the knowledge about their characteristics is limited, which was a challenge undertook in the project TREASURE in the frame of multicriteria evaluation of local pig breeds. The book represents a valuable compendium of data on census, breeding organisations, production systems, and performances with ambition to present their contemporary (preserved) phenotype. This work has received funding from the European Union’s Horizon 2020 research and innovation programme under grant agreement No 634476 for project with acronym TREASURE. The content of this book reflects only the authors' view and the European Union Agency is not responsible for any use that may be made of the information it contains.

THE SECOND REPORT ON THE STATE OF THE WORLD’s ANIMAL GENETIC RESOURCES FOR FOOD AND AGRICULTURE by Food and Agriculture Organization of the United Nations Pdf

Animal genetic resource diversity underpins the supply livestock products and services across a wide range of production environments. It promotes resilience and serves as a basis for adapting livestock management to changing conditions. It is vital to livelihoods of many of the world’s poor people. It can contribute to the delivery of ecosystem services such as landscape management and the maintenance of wildlife habitats. However, it is often undervalued, underused and under threat. This report updates the global assessment provided in the first report on The State of the World’s Animal Genetic Resources for Food and Agriculture, published in 2007. It focuses particularly on changes that have occurred during the period since the first report was published. It serves as a basis for a review, and potential update, of the Global Plan of Action for Animal Genetic Resources, which since 2007 has provided an agreed international framework for the management of livestock biodiversity. Drawing on 129 country reports, it presents an analysis of the state of livestock diversity, the influence of livestock-sector trends on the management of animal genetic resources, the state of capacity to manage animal genetic resources, including legal and policy frameworks, and the state of the art in tools and methods for characterization, valuation, use, development and conservation.

Goat Science by Sándor Kukovics Pdf

Goat science covers quite a wide range and varieties of topics, from genetics and breeding, via nutrition, production systems, reproduction, milk and meat production, animal health and parasitism, etc., up to the effects of goat products on human health. In this book, several parts of them are presented within 18 different chapters. Molecular genetics and genetic improvement of goats are the new approaches of goat development. Several factors affect the passage rate of digesta in goats, but for diet properties, goats are similar to other ruminants. Iodine deficiency in goats could be dangerous. Assisted reproduction techniques have similar importance in goats like in other ruminants. Milk and meat production traits of goats are almost equally important and have significant positive impacts on human health. Many factors affect the health of goats, heat stress being of increasing importance. Production systems could modify all of the abovementioned characteristics of goats.

Pork by Paulo E.S. Munekata,Mirian Pateiro,Daniel Franco,José M. Lorenzo Pdf

The processing of pork is a common technological practice that modifies the taste, flavor, texture and color of raw pork meat. Due to pork’s accessible price and versatility, the manufacture of pork products to offer a variety of options to consumers is an important strategy of the meat industries in this sector to improve profits and expand into new markets at the local, regional and international levels. The diversity of pork products reflects the diversity and history of many local cultures around the world, as well as a growing interest in preserving traditional processing practices. Pork: Meat Quality and Processed Meat Products delves into the various kinds of pork and the methods used to prepare it for consumption, including fresh meat products, fermented sausages, dry-cured products, blood sausages and cooked sausages. Each category starts with a specific raw material (entire cut vs. minced pork meat) to which is added a unique combination of ingredients (e.g., sodium chloride, starter cultures, blood, seasoning and spices). The method of processing (such as salting, drying, thermal processing and fermenting) takes consumer tastes and storage needs into account, as well as how each product will be consumed (cooked, sliced, spread and as an ingredient in other dishes, for instance). Consequently, a wide range of products made from pork are currently being produced worldwide. Added to this is the increasing importance of ingredients and health factors to consumers; the resulting demand for products that address specific health concerns is having a significant impact on research into and the production of pork meat products. Key Features: Comprehensively presents and discusses the wealth of information about pork products Includes specific details about the processing, quality of final products and innovation in the industry Presents innovative, health-oriented approaches to making traditional and commercial pork products Discusses healthier pork meat products that address consumer trends and government recommendations The production of health-oriented pork products is an emerging and promising investigation area with a direct impact on the currect market for meat products.
