Functional Nucleic Acid Based Biosensors for Food Safety Detection by Yunbo Luo Pdf

This book highlights the development of a functional nucleic acid based biosensor detection method in the context of food safety. Although there have been major advances in food processing technology in both developed and developing countries, food safety assurance systems are generally becoming more stringent, in response to growing (both real and perceived) food safety problems. These problems are due in part to foodborne microorganisms, heavy metals, and small chemical molecules (biological toxins, pesticide residues, and veterinary drug residues), etc. In addition, the nucleic acid biomarkers (DNA methylation, microRNA, and circRNA) induced by these risk factors are also closely related to food safety. Accordingly, this book offers a brief guide to targets and strategies in functional nucleic acid based biosensors for food safety detection. Divided into several chapters that focus on various respective targets, it will be a valuable resource for students and researchers in the fields of biosensor detection, food science etc.

Microarray Detection and Characterization of Bacterial Foodborne Pathogens by Guillermo López-Campos,Joaquín V. Martínez-Suárez,Mónica Aguado-Urda,Victoria López-Alonso Pdf

This is a review of recent advances on the use of DNA microarray for diagnosing foodborne pathogens. Rapid detection and characterization of foodborne pathogens is critical for food safety. Many relevant technologies have been intensively developed to date. DNA microarray technology offers a new way to food safety involving pathogen detection and characterization. DNA microarray can be used for detection and characterization of pathogens by analyzing hybridization patterns between capture probes and nucleic acids isolated from food samples or bacteria. It allows more rapid, accurate, and cost-effective detection of pathogens compared with traditional approaches of cultivation or immuno-assays. The application of DNA microarrays to different foodborne bacteria, such as Campylobacter, Salmonella, Listeria monocytogenes, or Shiga toxin producing Escherichia coli, will improve their rapid identification and characterization of their genetic traits (e.g., antimicrobial resistance, virulence). As bacterial foodborne diseases are posing more serious threats to public healthcare, development of rapid and accurate methods for pathogen detection and characterization is critical to their proper control at the earliest time.

This book offers an overview of state-of-the-art in non amplified DNA detection methods and provides chemists, biochemists, biotechnologists and material scientists with an introduction to these methods. In fact all these fields have dedicated resources to the problem of nucleic acid detection, each contributing with their own specific methods and concepts. This book will explain the basic principles of the different non amplified DNA detection methods available, highlighting their respective advantages and limitations. Non-amplified DNA detection can be achieved by adopting different techniques. Such techniques have allowed the commercialization of innovative platforms for DNA detection that are expected to break into the DNA diagnostics market. The enhanced sensitivity required for the detection of non amplified genomic DNA has prompted new strategies that can achieve ultrasensitivity by combining specific materials with specific detection tools. Advanced materials play multiple roles in ultrasensitive detection. Optical and electrochemical detection tools are among the most widely investigated to analyze non amplified nucleic acids. Biosensors based on piezoelectric crystal have been also used to detect unamplified genomic DNA. The main scientific topics related to DNA diagnostics are discussed by an outstanding set of authors with proven experience in this field.
